Apple Cranberry Pie!



I have not had time to get this recipe up until now. Sheesh! What a busy week! Anyways, I hope to get a picture up for this recipe tomorrow. It is my family's favorite Apple-Cranberry Crumble Pie. * NOTE : The apple amount can vary depending on the size of your apples. These were medium sized apples. Just adjust amount if you have smaller or larger apples. You want enought to mound above the rim of the crust as they shrink when baked.

Apple-Cranberry Crumble Pie

Pie Ingredients

1-9 inch vegan pie crust(store bought or homemade) prepared in the pie pan, ready to go
3* granny smith apples (peeled, cored, thin-sliced)
2* jonathon apples (peeled, cored, thin-sliced)
3 Tbsp AP flour
1 cup cranberries (whole, fresh or frozen, the ones in the bag)
1/3 cup brown sugar
1 tsp cinnamon

Combine sliced apples in a bowl with the cranberries, flour, brown sugar and cinnamon. Toss together until apples are coated. Pour apples into the pie crust mounding higher in the center. Prepare crumble.

Crumble:

1/4 cup earth balance or other vegan margarine (cold, cut into chunks)
1/4 cup flour
1/3 of a cup of brown sugar
1/4 cup oatmeal
1 tsp cinnamon

mix together the flour, sugar, oatmeal, and cinnamon. Cut the margarine into the mixture until it is coarsely mixed or is "crumbly". If the margarine isn't cold enough, it will sort of mix together and not be "crumbly". That's ok, we can still use it. Just take the "crumbles" or mixture and spread them over the top of the pie. Cover the pie with foil and bake at 400 for 30 minutes. Then lower the heat and bake at 350 for another 30 minutes or until the top is golden and the apples are cooked through.

wow.. I really look forward to trying this! Thanks for the post.
my kids LOVE Apples maybe this will sway them to loving cranberries too!! (they like cranberrie juice.. just not cranberries.. yet)

Followed recipe exactly except that I used half granny smith half golden apples (what I had on hand). Cranberries were too bitter but better the next day. Overall it was pretty good.
