Ooooh a new blog. Hopefully I can keep this one going. This is going to be a food blog. A vegan food blog, to be exact. I plan on using it to post original recipes and my feedback on recipes that I have tried.

First recipe:

This is an original. I made this yesterday morning (I'll start taking pictures eventually).

Black Bean Fajita Soup

6 cups veg broth
1-28 oz can crushed tomatoes
3 oz. tomato paste
1/2 cup cilantro, chopped
salt and pepper, to taste
cumin, to taste
chili powder (how much, depends on you. I use about half a Tbsp)
1 red bell and 1 green bell pepper(1/4 of each chopped fine, rest sliced and reserved)
1 red onion (1/2 chopped fine, 1/2 sliced and reserved)
3 cloves garlic, finely chopped
8 oz frozen corn
2-15 oz cans of black beans, drained and rinsed or cooked equivalent

additional garnish
tortilla chips crushed
sour supreme
1 cubed avocado

Saute the finely chopped vegetables (garlic, onions, and peppers), in olive oil in the bottom of a large soup or stock pot. When cooked through, add vegetable broth, tomatoes, tomato paste, cumin, cilantro, beans, corn, and salt and pepper. Simmer, stirring once in a while, for about 30 minutes. Meanwhile, take the reserved peppers and onions and saute them in olive oil until cooked through.

Serve the soup in bowls, on top garnish with the cooked, sliced, peppers and onions, crushed tortilla chips, sour supreme, and avocado.
